Nut Butter and Banana Pancakes

Here is the recipe for the yummy, kid-friendly pancakes that we had at our recent GAPS Group Session.

Nut Butter Banana Pancakes


1 ripe banana ( meaning that it has MANY brown spots on it)

2 eggs

1/4 cup nut butter (or seed butter, if there is an allergy to nuts)


Mix all ingredients with a mixer. Spoon into hot oiled (with coconut oil or ghee) skillet and brown on both sides. Set burner to medium-low and watch so they do not burn. They brown quicker than a traditional pancake.

Tip: Smaller pancakes are easier to turn (at most, use a heaping tablespoon of batter). I find that these pancakes are easy enough for kids (11+) to make on their own, they have a wonderful consistency, they brown beautifully, and a kid can even flip them when they are small in size. A keeper of a recipe.
