• Intestinal permeability and why it plays such a massive role in your digestion, wellness and overall health.
• 2 seemingly innocent proteins our bodies cannot digest.

Rodney Ford, MD, MB, BS, FRACP, Gluten Food Allergy Expert, Pediatric Gastroenterologist

The Surprising Ways Gluten Sensitivity Can Affect a Child’s Health

• A myriad of issues that can manifest in children with gluten sensitivity
• The frequent hidden cause of “sore tummies” in children.
• How testing may not show the whole picture.
• How a test can say you’re NOT sensitive, yet you feel better when a food is absent.
• The body organ that’s MOST affected by gluten, and why it’s systemic.

Umberto Volta, MD, Director of Coeliac Disease Simple Unit, St. Orsola-Malpighi Hospital, University of Bologna, Italy

• Why our immune system sometimes attacks its own tissues or organs.

Properly Testing for Gluten Sensitivity and Why Current Methods Fail

• Let’s understand and get to the bottom of available testing procedures
• Why the prick test produces many false negatives for allergies, including gluten.
• How saliva tests have been nearly 100% effective in identifying gluten sensitivity.
• The often overlooked form of blood testing that’s amazingly effective.

We will bring all of the material together, so that you can leave with a full understanding of:

  • The many ways that gluten can affect the brain and the body
  • The connection of gluten and intestinal permeability with autoimmunity.
  • What is non-celiac gluten sensitivity?
  • What is different between the gluten that my ancestors consumed and the gluten we have today?
  • Why does testing not show gluten sensitivity, yet one may feel better without gluten?
  • What does it mean if biopsy is negative, yet gliadin antibodies are present?
  • What does it mean if biopsy is negative, gliadin antibodies are not elevated, yet there is inflammation?
  • What are various dietary protocols that may benefit those with intestinal permeability and/or gluten issues?
  • What testing is available to me locally – as a resident of NY state, living in the greater Rochester area.
  • What are my next steps?

What is the format of the Gluten Summit Educational Series - Rochester NY

The first two sessions (February 25th and March 4th) will include 2 video recorded presentations per session and a Q&A period. The 3rd session on March 11th will include 1 video recorded presentation and then a presentation and Q&A by Laura Villanti- At Home With Wellness - Certified GAPS Practitioner, reviewing the following:

  • What testing options are available to us here in NY state and in Rochester area in particular
  • What to do if best testing options come back negative, yet you believe that gluten may be an issue
  • Review of several dietary protocols and how they may be relevant for those with gluten sensitivity or intestinal permeability- Gluten Free, Weston A Price, Paleo, Specific Carbohydrate Diet, GAPS, Paleo Autoimmune, Low FODMAPS, Body Ecology Diet
  • What's are the next best steps to take.....

A lot of material to learn ........

The recorded presentations that will be shared in this educational series were part of the 29 hour Gluten Summit that was hosted in November 2013 by Dr. Tom O'Bryan. In hosting a local educational series for the Rochester area, I aim to bring awareness to many who did not have access to this material and/or those who would not want to review 29 hours of material, as well as to make this valuable information "workable and usable" for you. I will include the most notable points of the whole 29 hour Gluten Summit. In doing so, my goal is that each attendee will leave with a great understanding as to how gluten may be affecting your health or that of your children and what to do about it.

The greatest awareness and appreciation will certainly come through understanding what is now termed "non-celiac gluten sensitivity" or "gluten related disorders."

I have great confidence that one will take away an immense understanding of gluten, the validity of testing, autoimmunity and much, much more.
