What is the format of the Gluten Summit Educational Series - Rochester NY

The first two sessions (February 25th and March 4th) will include 2 video recorded presentations per session and a Q&A period. The 3rd session on March 11th will include 1 video recorded presentation and then a presentation and Q&A by Laura Villanti- At Home With Wellness - Certified GAPS Practitioner, reviewing the following:

  • What testing options are available to us here in NY state and in Rochester area in particular
  • What to do if best testing options come back negative, yet you believe that gluten may be an issue
  • Review of several dietary protocols and how they may be relevant for those with gluten sensitivity or intestinal permeability- Gluten Free, Weston A Price, Paleo, Specific Carbohydrate Diet, GAPS, Paleo Autoimmune, Low FODMAPS, Body Ecology Diet
  • What's are the next best steps to take.....

The recorded presentations that will be shared in this educational series were part of the 29 hour Gluten Summit that was hosted in November 2013 by Dr. Tom O'Bryan. In hosting a local educational series for the Rochester area, I aim to bring awareness to many who did not have access to this material and/or those who would not want to review 29 hours of material, as well as to make this valuable information "workable and usable" for you. I will include the most notable points of the whole 29 hour Gluten Summit. In doing so, my goal is that each attendee will leave with a great understanding as to how gluten may be affecting your health or that of your children and what to do about it.

The greatest awareness and appreciation will certainly come through understanding what is now termed "non-celiac gluten sensitivity" or "gluten related disorders."

I have great confidence that one will take away an immense understanding of gluten, the validity of testing, autoimmunity and much, much more.
